The dish we chose is called ”Raggmunk”, potato pancake. It´s an old traditional dish and it repesents our landscape, Östergötland.
It´s made from a pancake batter which is added to grated potatoes. The potato pancake is fried and served with pork and lingonberry jam.
The dish is served as lunch at school sometimes and many pupils like it.

During the Easter holidays, we had planned that the pupils who were at the recreation center, would have to cook potato pancake for snacks.
We talked about that the dish represent our landsacape, and we also found out why it is called ”raggmunk”. ”Ragg” means crispy. The edges of the potato pancake will be crispy when you fri it. ”Munk” refers to a kind of frying pan, ”munkpanna”, as you fried the potato pancake in.
The pupils were allowed to follow a prescription, measure and weigh ingredients and mix the batter. Then they fried the potato pancakes.
we ate the potato pancake together as a snack and it was much appreciated by both pupils and staff!

Du behöver

  • 800 g potatis
  • 1 ägg
  • 1,5 dl vetemjöl
  • 3 dl mjölk
  • 2 tsk salt
  • 50 g smör

Gör så här

  1. Gör en smet av ägg, mjöl och mjölk. Skala potatisen och riv den på ett rivjärn direkt ner i smeten så hinner den inte mörkna. Salta.
  2. Stek små plättar av smeten i smör på måttlig värme så att potatisen hinner bli genomstekt.
